Stir-fried Water Spinach
Water spinach is one of the most popular veggie in Vietnam. When the summer comes, you can find it in every local market. My family has it for our meal almost every other day. Just like other dark green leafy veggies, it is a powerhouse of nutrients that benefit your body in many ways. It can be easily prepared and in this post, I’ll show you how to stir fry this wonderful vegetable.
Step 1: Break them into shorter stems with your fingers. Then wash carefully until the water is clear, it usually takes about 3 times or so. Then let it drain well.
Step 2: Bring the water to a boil over high heat, add in a pinch of salt, then add in the veggie, blanch it for just a minute. In case you don’t want to stir fry but only cook the veggie in boiling water, then cook over high heat for a bit longer, about 5 to 7 mins, uncovered.
Step 3: After that, remove the veggie and immediately soak them into cold water, the best way is with some ice cubes to remain the green color.
Then discard the water and let it drain again. It can be served this way with some fish sauce alongside with rice and other savory dishes.
Step 4: Smash and slice 4-5 garlic gloves. Heat a frying pan with some oil until it starts to smoke, add in the garlic and stir until fragrance.
Step 5: Add in the veggie and keep stirring constantly, season with a pinch of salt, a pinch of sugar, some fish sauce and some oyster sauce to enhance the flavor. If you’re vegetarian, you can replace fish sauce and oyster sauce with soy sauce. Toss until the stems turn tender.
