How to make vietnamese Peanut Sticky Rice
Xoi Lac – the peanut sticky rice is a very humble and familiar vietnamese breakfast dish that I used to have as a little girl. It’s super easy to make and in this post I’ll show you how.
400g sweet rice
150g raw peanut
3-4 tbsp coconut water (optional)
Step 1: The rice needs to be soaked in water at least 5 hours or the best way is overnight. Add in the a pinch of salt, mix well and set aside.
Step 2: With the peanut, you can also soak them in cold water for a few hours (but optional), then cook all the way through. It will take approximately 15-20 mins. Now transfer the the rice into a large bowl, add in the cooked peanut and mix well.
Step 3: Prepare the steamer and bring the water underneath to a boil, gradually add in the mixture, cover the lid and keep steaming at medium high.
Step 4: After steaming for about 15 mins, add in 3-4 tbsp coconut water (or just regular water if coconut water is not available), then fluff the rice evenly. The coconut water will help to soften the rice and add in better flavour. Keep steaming for another half an hour and there you have it, super easy and still delicious.
Peanut sticky rice can be served with Muoi Vung – a mixture of roasted peanut, sesame seed and salt, or with pork floss. Happy cooking!
