How to make Vietnamese Beef Stew

Winter is stewing season and Vietnamese Beef Stew (Bo Kho) is one of my favorite dishes. It can be served in many different ways and still so delicious. This is also a great idea to prepare a family meal for these joyful holidays. Join me in the kitchen and make the best beef stew for your loved ones.

 Ingredients:

2 lbs beef shank (or chuck roll, brisket)
2 – 3 carrots
1-2 tomatoes
2 lemon grass stalks
1 cinnamon stick, 3 star anises

For the seasoning:
1 tsp salt
1 tsp sugar
1 tsp beef stew seasoning (or 5 spice powder)
1 tsp fish sauce
1 tsp soy sauce
1 tsp minced shallot
1 tsp minced garlic
ground black pepper

To make this dish, I prefer beef shank, tendon or chuck roll because these cuts can give better texture for the end result, but you can choose any other cut of beef, just make sure it’s not too lean so that our beef stew won’t turn out too dry.

Step 1: Slice the beef into bite size cubes. Then season the beef with the ingredients listed above. Mix thoroughly together and let it rest for at least half an hour so that the beef can be marinated well.

Step 2: Prepare other ingredients: cut the tomato into small pieces, slice the carrot into bite sized sections. Next, smash 2 stalks of lemon grass, then cut them into shorter sticks.

Step 3: In a sauce pan, stir 1 tsp minced shallot and minced garlic until fragrant, then add in the beef, sear them quickly on medium high heat for few minutes, then add in the tomato. Continue to stir and then add in the carrot, the lemon grass, a cinnamon stick and some star anises to create the typical aroma for the beef stew, pour in the water to cover everything.

Step 4: Bring it to a boil over high heat, skim off the foam rising on top and then reduce the heat to simmer for about 1 to 1 and a half hour. To shorten the cooking time, you can also use a pressure cooker if available. When the waiting time is over, remove the lemon grass, the cinnamon stick and star anises.

To serve this dish, assemble handful rice noodle in a serving bowl with some green onion and cilantro, ladle the boiling hot soup over it and serve.

Another way is to dip the vietnamese banh mi or french bread into the sauce and enjoy.
