How to make Squid Cake
This is one of many signature dishes of my mom’s and today we’re gonna see how she makes it.
500g minced pork (best way is to have it not too lean but rather fatty, )
1 tsp backing powder
1 tsp potato starch
onion, dill (chopped)
salt, pepper, fish sauce
Step 1: Dissolve the backing powder and potato starch with a tbsp of water and set a side.
Step 2: Wash the squid carefully and wipe them real dry, then cut them into small pieces.
Step 3: Chop the dill and onion
Step 4: Now prepare a food processor to chop the ingredients, we gonna begin with the pork, it needs to be chopped very finely
After that, add in some onion and some squid, continue to roughly chop them together.
We do this in a particular order to have a nutty texture for the cakes in the end. When it’s done, transfer it into a large bowl. Keep doing the same with the rest.
Step 5: Add in all the dill, then the mixture of backing powder and potato starch. Continue to mix.
Step 6: Season the mixture with some salt, fish sauce and pepper up to your taste. Keep mixing
Step 7: Now it’s time to form the cakes. Take a little bit vegetable oil, spread it evenly over your cloves to avoid stickiness, then start forming it into a ball, slightly press so that it can turn into cake form. It’s very easy.
Step 8: Now, use some black caramel sauce to tap over both sides of the cakes. This step is optional, we do this just to get the cakes a better color but you can totally skip it.
Step 9: Transfer all the cakes onto a steamer and steam them all. It will take about 15-20 mins.
Step 10: When the steaming process is done, remove the cakes.
Step 11: Last but not least, prepare a frying pan with vegetable oil, place the cake into it and fry until both sides turn golden light brown. This step will make the cakes become crispier and they also look more tasty.
And done. You can serve these cakes as rice side dish or with bread. Happy cooking!
