How to make Pumpkin Soup
When the fall comes, pumpkin is alway a great choice to make something nutritious and tasty for your family. In the post I’ll show you how to make an easy but very delicious pumpkin soup.
pumpkin (peeled und cut in cubes)
100g minced pork
10 medium shrimps (peeled)
Step 1: Mince the shrimps together with the pork and white onion until very well combined (For this step you can put everything into a food processor to chop as an easier method). Then add in the mixture a pinch of salt, some fish sauce, some sugar and ground pepper.
Step 2: Grease a glove with small amount of vegetable oil to avoid stickiness, then mix well and begin to form into small balls.
Step 3: In a pot add 1 tbsp oil, then quickly stir the minced onion. Add in the pumpkin and stir for a few more seconds. After that, pour in a liter of water, drop all the meat balls into the pot, then bring to a boil.
Don’t forget to skim off the foam in order to achieve a clear broth. Simmer until the pumpkin just become tender, be careful because it’s easy to overcook and the pumpkin will turn mushy. Enhance the soup with some salt, fish sauce and sugar.
You can serve this pumpkin soup just like so with green onion and cilantro or you can eat it along side steam white rice.
The soup is naturally sweet and light, super delicious and healthy.
