How to make Hollow Fried Breadstick – Youtiao
It does take a lot of time and patience to make perfect hollow fried breadsticks. After many attempts, I figure out one recipe that I’m really happy with and wanna share with you.
5g baking ammonia
3g instant yeast (optional, the yeast makes the breadsticks softer but it’s not a “must”)
280ml sparkling water
Step 1: Let’s get started by mixing the flour with salt of sugar. After that, add 10 ml warm water into the instant yeast, stir until it’s dissolved, then let it rest for 5 minutes.
Step 2: Add the baking ammonia into the sparkling water. Then mix all the ingredients together with a stand mixer, or you can knead the dough with your hand for 1 min. The kneading process should be repeated 3 times, one after another 20 mins.
After that, let the dough rest for about 2-3 hours.
Step 3: Take the dough out and stretch it into a thin long one, use a knife to cut it into small pieces, about 5 cm long and 1,5 cm wide. Stick every two pieces together to form pairs.
Step 4: The oil should be heated on hight at first, then turned down to medium. Now fry the dough carefully, don’t put two many pieces at once in the frying pan because you’re not gonna have enough space to handle all of them.
Fry the breads until they turn golden-brown, that means they’re done.
