How to make Crispy Skin Pork Belly

Since Crispy-Skin-Pork-Belly is my favorite dish and it’s not easy to find any ready-to-serve one around my corner, I decide to give it couple of attempts to make it at home. Fortunately I did succeed and I’m very glad to share with you my secret (by the way, this post is the better version of my YouTube Video recipe)


500g Pork Belly (choose the thin one)


Salt, Vinegar, (chicken powder, pepper, sugar: optional)

A needle to poke into the skin

Step 1: Dip the pork belly in boiling water for about 2 minutes, then take it out and wipe it with a kitchen towel real dry, especially the skin.

Step 2: Marinate the meat well with five-spice-powder, salt (you can add fish-sauce, chicken powder or sugar according to your taste). DO NOT marinate the skin, the skin always need to be dry, the drier the better!

Step 3: Place the pork belly uncovered in the fridge for 2-3 hours (don’t wrap the cling film over it, so that the skin can get drier).

Step 4: After 2-3 hours: take the meat out. Use the needle to slightly poke into the skin evenly, then wipe the skin dry again, then apply a layer of salt on it.

Step 5: Place the pork belly in the preheated oven at 200°C

Step 6: After broiling for 30 minutes, take it out, brush away the old salt, then wipe the skin dry one more time. Use the needle to poke into the skin again, then use a kitchen towel to apply one layer of vinegar on the skin. After that sprinkle a bit of salt on it. Continue to broil it for another 30 minutes over maximum temperature (250°C). Then your result should look like mine :-).
