How to make Banana w/ Sweet Potato Fritter
This is one of my favorite snacks as a child and I still love it until now. It’s very easy to make, you can make them with either banana or sweet potato or both of them as I do in this recipe. Let’s begin.
For the batter:
200g all purpose flour
3 tbsp tapioca starch (or corn starch)
1 pinch of turmeric powder
1 pinch of salt
1/2 tbsp yeast
300 ml water
300g sweet potato (white ones is much better than the orange ones)
3-4 ripe thai bananas
Step 1: To make the batter, mix the ingredients above together until smooth. Let the batter rest for about half an hour.
Step 2: Cut the sweet potato into strips
Step 3: Another main ingredient is thai banana, they have a rounder shape than ordinary ones, this type of banana gives the fritter a firm yet chewy texture. Peel and split them lengthwise into 3 sections.
Step 4: After half an hour, the batter is ready. Gradually add in the sweet potato and gently mix them together.
Step 5: Now it’s time to deep fry. Add in a ladle a bit of sweet potato coated with the batter, dip the banana slice in the batter and put it in the middle, then add some more sweet potato and deep fry over medium high heat. Occasionally turn the fritters over to achieve even browning. Fry until they turns golden on both sides, then take them out and put on a rack or a kitchen towel to remove all the excess oil. And we are done here.
The fritter should be served hot. It’s sweet, super crunchy and delightful, it’s just impossible to walk away from. I hope you gonna give it a try and let me know how it turns out. Happy cooking everyone!
