Duck Bamboo Noodle Soup
Today I’ll introduce to you a very tasty dish which is a perfect choice for the winter – the duck bamboo noodle soup. Let’s get started.
1.5-2 lbs young bamboo
onion, culantro, vietnamese mint
ginger, garlic, chili pepper
salt, fish sauce, vinegar
Step 1: In general, ducks usually have pretty strong smell, so we’re gonna need to eliminate the smell with salt by rubbing it on the duck skin, additionally, smash a ginger root and dip it into white wine, and again rubbing the duck thoroughly.
Step 2: Wash the duck carefully and place it into the saucepan with enough water, an onion and a piece of ginger. Bring it to a boil over high heat. When the broth is boiling, lower the heat and try to skim out all the skunk on the surface. Now continue to cook the duck over medium low until tender.
Step 3: Prepare the bamboo. I got the long fresh bamboo from the asian grocery store but you can also use the dry one. Cut the bamboo into thin strips and soak them in cold water, then wash and drain carefully.
Step 4: In a frying pan, add in vegetable oil and minced shallot, stir until caramelized, then add in the bamboo. Stir for a few minutes, then season with some salt and fish sauce. Continue to stir few more seconds, then off with the heat.
Step 5: Now the the duck should be done, remove it from the broth and let cool down. Also remove the ginger and onion from the broth, then season with salt, fish sauce and vinegar to your taste. Add the bamboo into it and now you have a delicious broth for the noodle.
Step 6: Debone the duck then cut it into thin slices and set aside.
Step 7: Prepare the herbs – wash and drain them well, then slice thinly.
Step 8: Another important ingredient of this dish is the dipping sauce for the duck meat. For this sauce we gonna need fish sauce, a tsp of sugar and some lime juice. Then add in minced ginger, minced garlic and chili pepper. Stir well and set aside.
Step 9: Now it’s time to assemble the dish. Place a handful of rice noodle into a serving bowl, add in the duck meat, the bamboo strips and some herbs. Then bring the broth to rapid boil and ladle onto the bowl. Now we have an irresistible delicious noodle soup for the frosty winter. Enjoy!
