Mung Bean Pudding
This is a super easy to make, but still very tasty dessert of Vietnam 🙂
100 gram peeled mung bean
170 gram sugar
40 gram tapioca starch
1 liter water
coconut milk, shredded coconut (optional)
pomelo extract (optional)
First step, let the mung bean soak in water for about 30 mins, they’ll double in size and turn softer.
Next, add them in a steamer evenly and cook for 20 mins over medium-high heat.
As long as the beans are no longer firm but still in their shape, they are already well cooked.
Now, it’s time to prepare the pudding. In the pot, 1 liter of water, 170 gram sugar, 40 gram tapioca starch and a pinch of salt.
Then off with the heat. Add in the steamed beans and stir gently.
Now it’s time for serving! Mung bean pudding goes perfectly with coconut milk and shredded coconut- if available. If you happen to have the pomelo extract, go ahead and add a drop for a perfect fragrance.
