Caramelized Black-Pepper Fish (Mackerel or Tuna)
This is a perfect dish for serving with hot-steamed rice on a cold day. In this post, I’ll show you an easy way to make it.
1 kg Fish (Mackerel or Tuna)
1 Tbsp of each: minced-garlic, -ginger, -lemongrass
1 Tbsp of each: sliced-ginger, -galangal root (thai ginger)
sugar, salt, fish sauce, chicken powder, black pepper
Let’s get started:
First of all, get the fish prepared and ready for seasoning in a clean bowl.
Add the minced garlic, ginger and lemongrass into the bowl, then add 1 tsp of chicken powder, 1 tsp of salt and 1 tbsp of fish sauce. Now cover up and let the fish well marinated for at least haft an hour.
After that, fry the fish for about 15 mins. Meanwhile, we can prepare the pot with a layer of sliced galangal-root (thai ginger) and original ginger, then transfer all the fish into it.
Prepare the caramel-liquid by adding 3 tbsp of sugar and 50ml of water into a smaller pot, cook it over medium-high heat until it turns yellow-brown, then pour the mixture over the fish. (you can skip this step if you have the instant caramel-sauce available by using 2 tbsp of it)
Now add in 150 ml of water, 2 tbsp of fish sauce and let the pot simmer for about an hour.
After that, add 1 tbsp of smashed black-pepper, then adjust the taste with fish sauce and sugar and cook it for another 2 mins. And we are done 🙂
