Banana in Coconutmilk with Tapioca Pearls Pudding

1 lb thai banana (or regular ripe banana)
1 can coconut milk (400ml)
1/2 cup water
2 tbsp tapioca pearls
crushed roasted peanut and sesame seeds
Thai banana is the main ingredient for this recipe. Thai banana looks a bit chubbier than regular banana and has a sweet taste with chewy texture. It can be found at asian grocery store, but you can also use regular banana, just make sure it’s ripe.
Step 1: Peel and slice the bananas into bite sized pieces. Gently mix them with 80g sugar. Let it set for about 20 minutes so that the bananas can absorb the sugar and taste better when cooked.
Step 2: Add tapioca pearls, coconut milk and water into the sauce pan, turn the heat to medium high and bring to a boil. Whisk constantly to prevent the pearls sticking to the bottom and burn. When it boils, turn off the heat and let the pearls cooked in the hot coconut milk for about 20 minutes. Even when the heat is off, it should still be hot enough to cook the pearls.
Step 3: After 20 minutes, the pearls should become bigger and translucent. Add in the banana slices. Gently mix and bring to a boil again, simmer for about 5 minutes and we are done.
This dessert may look quite runny right after being cooked but it will thicken up very quick when refrigerated. It can be served either hot or cold, or even with crushed ice. Top up with some crushed roasted peanut and sesame seeds, then you’ll have a delicious dessert for your family.
